Exclusively Olive Oil! If one of the great secrets of Cretan gastronomy lies in the harmony of the produce used, the simplicity of the finest dishes and the ingenuity of the local people, the other great secret bears the name of virgin olive oil: no other cooking fat is used so intensively in the traditional diet of the Cretans. Even the desserts are most often prepared with olive oil, and very rarely with butter. According to official international statistical data, each Cretan consumes more than 30 liters of olive oil annually – more than any other population group. In Italy and Spain, the predominant olive oil-producing countries of the Mediterranean, the average is just 10.5 liters!
The nutritional value of olive oil is enormous as it is the most powerful antioxidant in nature, thus protecting the body from oxidation and the growth of free radicals that cause serious diseases. Research done in Europe and America reveals that olive oil not only protects the heart but helps the proper functioning of many organs. It has a beneficial effect on several diseases, such as lowering cholesterol, having antioxidant activity, protecting against cancer and helping the liver function. Olive oil is also ideal for people with diabetes.



The Amazing Health Properties of Olive Oil’s Polyphenols
In 2012, the European Food Safety Authority (EFSA) approved the following claim: “olive oil polyphenols contribute to the protection of blood lipids from oxidative stress”, that means protection of LDL cholesterol from oxidation and consequently protection from heart attack and stroke. People need antioxidants to avoid excessive damage from oxidative stress, which has also been linked to illnesses such as chronic fatigue syndrome, fibromyalgia, diabetes, Alzheimer’s disease, Parkinson’s disease, atherosclerosis and cancer. Scientific studies suggest that some olive oil polyphenols, including oleacein and oleocanthal, can help us avoid this damage and help prevent these diseases. The extra virgin olive oil is the type of olive oil that tends to be richest in polyphenols. And that’s not all – extra olive oil is rich in vitamin E, an antioxidant that helps boost the immune system. It has also been shown that thereby the risk of high triglyceride levels, depression, osteoporosis and high blood pressure will be reduced.
